Recipe courtesy of Dominika Antalfy Ingredients ¾ cup barbecue sauce ¼ cup Worcestershire sauce ¼ cup Dijon mustard 1 / 3 cup maple syrup 3 teaspoons smoked paprika 1½ kg pork rashers (boneless pork ribs) 1. Combine sauces, maple syrup, mustard and paprika in a small saucepan. Stir until well combined and bring to the boil over medium-high heat. Reduce heat and simmer for 4-5 minutes until slightly thickened. Allow to cool and reserve half of the sauce to serve. Marinate pork in the remaining sauce for 1-2 hours. 2. Preheat oven to 220˚C/200˚C fan-forced. Place pork rashers in a single layer on a greased rack in a large baking tray lined with foil. Roast for 55-60 minutes, basting occasionally with marinade and turning, until golden brown. 3. Serve with reserved sauce mix for dipping and this quick and easy cabbage salad: Combine ½ cup white vinegar, ¼ cup white sugar, 1 tsp salt and 1-2 tablespoons olive oil in a screw top jar. Shake well to combine and pour over ½ a finely chopped white cabbage. Add fresh dill to taste and enjoy.
