Recipe provided by Rema Fakhoury Ingredients Dipping Sauce 8 asparagus spears, woody ends removed 8 round rice paper sheets 16 prawns, cooked shelled & halved lengthways 1 cup iceberg lettuce, shredded 1 handful Thai basil, leaves only 2 avocado, sliced 2 lebanese cucumber, cut into matchsticks 4 tbsp lime juice 1 tbsp fish sauce 1 tsp sugar 1 chilli, finely chopped Method 1. Blanch asparagus, should be tender but crisp. 2. Half fill a large bowl with lukewarm water. Dip one whole sheet of rice paper in water to soften, and lay flat on a plate. 3. Place two prawns in a line 3cm from top of rice paper wrapper. Top with a little shredded lettuce, 2-3 Thai basil leaves, 2 slices avocado, cucumber strips, and a piece of asparagus. 4. Fold sides of rice paper over filling, and then roll firmly from bottom to top. 5. Place each roll on a serving plate and cover with a slightly dampened cloth. 6. Serve with the dipping sauce (combine lime juice, sugar, fish sauce and chillies with 3 tablespoons water to make the sauce).
