Summer is here which means it is salad season. Having a summer salad recipe that you can call upon time and time again is a must for any Aussie entertainer. Gado gado is a crisp and hearty Indonesian salad full of vibrant colour. This delicious salad is beautifully presented when accompanied with earthy materials of ceramics and wood for an eye catching meal, perfect to enjoy with your family and friends. Anna Howard PLANTMADE WA @plantmadewa plantmadewa.com.au INGREDIENTS SERVES 4-6 BOWL 200gm cooked potatoes (chunks) 200gm firm tofu (squares) 1 tbsp olive oil 1/4 tsp turmeric 1/4 tsp salt small handful green beans small handful bean sprouts 1 carrot (julienne) 1/4 cucumber (julienne or rounds) 1/4-1/2 green cabbage (thinly cut) handful fresh coriander & mint crispy shallots lime (wedges) chilli (thinly cut) peanuts boiled eggs (optional) GADO GADO BOWL PEANUT SAUCE 1/2 cup peanut butter 1/2 cup soaked cashews 1 1/2 red chilli 1 tbsp grated ginger 1/4 cup tamari 1/4 cup lime juice 1 tsp sesame oil 1 1/2 tbsp maple syrup ASSEMBLY Marinade tofu in olive oil, turmeric and salt. Pan fry the tofu then potatoes. Prepare all other ingredients and pop into a bowl. Prepare peanut sauce by blending all ingredients until completely smooth. Drizzle with the peanut sauce. Serve with fresh herbs, chilli, peanuts and a squeeze of lime.
