12 J I L L A U S T R A L I A Low ABV drinks are certainly something people are becoming more familiar with; it is indeed becoming a big ‘trend’, but it is also not big ‘news’. Dating all the way back to the early 1900’s, we have the original example of the Spritz, a low ABV drink that used to simply involve wine and soda. Then as time went by, we saw the addition of a splash of Aperitif liquor to this classic cocktail. Many famous sherry and vermouth based cocktails have always been a low ABV form of drink, such as the Bamboo, the Sherry Cobbler and the Adonis. Today we are seeing a rise in this category with almost a re-discovery of ingredients like Vermouth, Aperitif, Hydrosols and Fermented Fruit wine. At Bartolo, our key focus is low ABV drinks, not to follow any trend, but because we love to experiment and combine the flavours of our drinks and food and therefore allow people to easily enjoy many different drinks throughout their culinary experience. I also feel that the way different delicate flavours and how they work in these drinks is a fundamental key to the overall drinking experience that helps with tasting all the elements in a specific way. I personally love to work with seasonal ingredients and believe that a drink should be simple yet intriguing, although this does not necessarily mean a cocktail is ‘simple’ in terms of technique. This reflects the overall vision of Bartolo; it feels like home, it feels like the right place to be at any time of the day, but if you look closely at every detail, you’ll be able to identify the meticulous work behind it. This is how it works for a drink in my opinion, you can discover it slowly, and the more you sip it, the more you uncover a different emotion or feeling. For those who may not be familiar with the term ‘low ABV’, it simply means Low Alcohol By Volume . While these types of drinks have a lower alcohol content than others, they are far from lacking in character and flavour. abv.
