58 Absoloutely Delicious Lemongrass Chicken Skewers (Serves 4) Ingredients 2 tablespoons lemongrass paste 2 teaspoons brown sugar 3 garlic cloves, chopped 1 tablespoon fish sauce 1 tablespoon chopped fresh coriander root and stem 3 kaffir lime leaves, vein removed, chopped 1 green onion, chopped 1/4 cup grapeseed oil 1kg chicken thigh fillets, trimmed, cut into 3cm cubes Steamed white rice, to serve Lime wedges, to serve Method Step 1 Place lemongrass paste, sugar, garlic, fish sauce, coriander root and stem, lime leaves and onion in a food processor.
