some tips on cooking
with camembert - plus
a super easy recipe for
homemade tortillas!
This is one of Jason’s favourite
things that I make! Use these
scrumptious homemade tortillas
for quesadillas, taco night, salad
wraps or even pizza bases. Yum!
•
3 cups plain
(or wholemeal)
flour
•
2/3 cup vegetable or olive oil
•
1 cup warm water
•
Pinch of salt
1.
Pop all ingredients into a mix
master (with a dough hook if you
have one) and mix for around 30
seconds until all ingredients are well
combined.
2.
Shape the dough into 12 equal
balls, place in an oiled bowl and
cover with cling film. Rest for 10
minutes.
3.
One at a time, roll the tortilla
out between two sheets of baking
paper until around 2mm thick. Set
aside with baking paper between
the tortillas so they don’t stick to
each other.
4.
Fry each tortilla in a hot, dry pan
for around 2 minutes each side until
nice and golden. Place them straight
into a large sealable lunch bag.
6.
Place the bag of tortillas in the
microwave for 30 seconds so they
steam and become nice and soft.
Tip: For hard shell tacos, drape each
tortilla over an oven rack (we place them
over 2 bars so they are nice and big,
witha flat bottom). Spray with cooking
oil and bake for about 10 minutes at
180°C until nice and golden.
Homemade Tortillas
Camembert cheese - soft, gooey, with mild mushroom
undertones, although delicious on its own, there are
endless ways to cook with it. Here are my top 5.
1. BAKED CAMEMBERT
- this
is a great dish for entertaining.
Place Camembert in an oven
proof dish and top with your fa-
vourite ingredients. Some of my
favourites are macadamias and
honey, garlic and thyme or red
onion and walnuts. Bake at 180
for 15-20 minutes until nice and
gooey. Serve with crunchy bread.
2. CAMEMBERT STUFFED CHICKEN BREAST
- stuffing a chicken breast
with cheese will add an exciting surprise to a boring dinner! I love add-
ing other flavours as well. Cranberries go great with this, but one of my
favourites is camembert and prosciutto! Yum!
3. CAMEMBERT SALAD
- toss camembert through any simple salad
to make it extra special. I love pairing it with caramelised pear and
rocket. For some extra crunch add some roasted walnuts or freshly made
croutons.
4. CAMEMBERT TART
- serve this with a simple salad for a quick easy
dinner. Blind bake puff pastry then top with slices of camembert, a
sprinkle of gruyere, slices of prosciutto and dried figs. Bake for 10 min-
utes until cheese is melted and golden.
5. TURKEY AND CAMEMBERT
- these two are a match made in
heaven! Whether its on a baguette
with cranberry sauce, or a topping
on a pizza, turkey and camembert
make a fantastic gourmet meal!
So there you have it, whether you
can ‘bert’ it or not, these are my top
5 ways to cook with camembert.
If all else fails, just eat it
on a cracker!
