Method: Rinse salmon under cold running water, pat dry, and set aside. In shallow glass bowl, combine all but last two ingredients. Place salmon in marinade. Cover and refrigerate for 1-2 hours. Remove from refrigerator and bring to room temperature. Remove salmon from marinade and reserve the liquid. Cook salmon, capsicum and onion on well-oiled barbecue (or grill over medium heat) for 6-7 minutes (or until lightly browned). Baste with marinade, turn, and baste again. Continue cooking for another 5 minutes (or until flesh is opaque when fork-tested). To serve: top fillets with capsicum and onions.
