Build your profile 18 Recipe No 5 in a series of 6 Summer greens with lime and coriander Summer greens with lime and coriander 250g snow peas, trimmed 2 bunches of asparagus, cut in half 250g sugar snaps, trimmed 250g fresh peas (shelled) 1/2 punnet cherry tomatoes, cut in half Dressing: 2 tablespoons lime juice 3 tablespoons chopped coriander 1/2 cup olive oil 1 tablespoon white wine vinegar METHOD Blanch the snow peas, asparagus and sugar snaps in boiling water for 30 seconds, drain and refresh in a bowl of iced cold water. Drain well. Cook peas in boiling water for 5 minutes, or until tender, drain and refresh in iced water. Drain well. Combine all vegetables and cherry tomatoes.
