Pre-heat the oven to 180ºC/350ºF/

GasMark 4

Season the flour and place on a large plate,

toss themeat until coated. Heat the oil in a large

frying pan and cook themeat, over amedium heat,

for 2-3minutes each side, until browned (youwill

need to do this in two batches). Transfer the browned

meat to a casserole dish, using a slotted spoon.

Add the peppers to the frying pan and cook for 2minutes.

Add the tomatoes and bring to the boil. Add these to the

lamb and cook in the oven for 40minutes or until the

meat is tender.Meanwhile,mix all the ingredients for

the gremolata together.

Prepare the couscous according to packet instructions,

then fluff upwith a fork. Heat the oil in a small frying

pan and cook the onion over amedium heat for

10minutes until golden brown. Add to the

couscous andmixwell.

Sprinkle the gremolata over the lamb

casserole and servewith the couscous.

Serves 4

Sea salt and freshly ground

black pepper

2 tbsp plainwhite flour

2 x 400g packs diced lamb,

trimmed of any excess fat

2-3 tbsp extra virgin olive oil

1 yellow and 1 green pepper,

deseeded and chopped

400g can chopped tomatoes

For the gremolata

1 garlic clove, very finely

chopped

3 tbsp finely chopped fresh

parsley

Grated rind of 1 lemon

For the couscous

25g (9oz) couscous

1 tbsp extra virgin olive oil

1 large onion, finely sliced
