Capocollo Loin (Mild) Our Capocollo Loin (also known as ‘lonza’) is made solely from pork loin. Capocollo Loin (Chilli) Our chilli Capocollo Loin (also known as chilli ‘lonza’) is made solely from lean pork loin. Hand-prepared in a similar process to prosciutto, but with added chilli and less maturing time due to its smaller size (90-100 days), this lean cut adds sweetness and heat to a pizza or antipasto platter. Guanciale Guanciale is a cured meat made from the marbled pork cheek (also known as the ‘jowl’). Each piece is hand-rubbed with salt, spices and pepper before being air-dried for 60-90 days to create a deep, fatty and salty flavour.
