M E N ' S C U L T U R E 39 Location, is important to us, as we wanted to open 8bit in Footscray in Melbourne’s west.. an area which has a large Vietnamese community, which there are lots of great Vietnamese restaurants, and other ethnic restaurants such as African, and Indian. but we realised that there really wasn’t anywhere to get a burger and fries. We were right too, as when we opened in 2014, it was a big hit, since then we have opened three more stores, two in the CBD in Melbourne and a brand new one thats opened in Darling Square in Sydney, our first interstate store. We didn’t just want to open another burger shop, we wanted it to feel like a diner, where there is a bit more offering, such as hotdogs, loaded fries and milkshakes. Its quite common now, to see these items on a lot of burger shop menus, but when we opened there wasn’t many loaded fries or potato gems on many menus, which made us feel unique at that time. We also named the burgers and hotdogs after great video games of the past, and most of the names in some way reflect what's in the burger. The ‘Double Dragon’ has double beef, double cheese, and double bacon and the ‘Golden Axe’ has golden crispy fried chicken. The most popular burger at 8bit is the ‘8bit with cheese’ which is our classic style burger. Beef patty, American cheese, tomato, red onion, pickles, ketchup, American mustard, lettuce and our 8bit sauce. S H A Y N E M c C A L L U M Shayne McCallum, chef and co-owner from 8bit has been cooking for just over 20 years in Melbourne, working in places such as Blakes, The Graham, The Botanical, and at Captain Melville, where Shayne had met Alan Sam his boss at the time, and became business partners with 8bit. At 8bit, we are extremely grateful for its success, we have an awesome formula, and as long as we keep working with like minded people, we will continue to succeed. 8bit first opened in 2014, this year in April we opened our fourth store. We have been opening a store each year! We definitely want to open more 8bit stores, but now that Sydney is open, we will just continue to work on the stores we have at the moment. We are enjoying a lot of collaborative work with different companies, breweries, and other hospitality businesses.
