ASPARAGUS AND

SNOW PEA SALAD

Preparation time: 15 minutes

Total Cooking Time: 5 minutes

Serves: 4-5

INGREDIENTS

200gm snow peas

1 bunch asparagus spears

Dressing:

2 tablespoons peanut oil

3 teaspoons sesame oil

3 teaspoons rice or red wine vinegar

½ teaspoon sugar

1 tablespoon sesame seeds

METHOD

1. Top and tail snow peas.

2. Trim any woody ends from asparagus.

Cut spears diagonally in half and place in a

pan of boiling water. Stand 1 minute then

drain and plunge into iced water. Drain

well.

3. Place oils, vinegar and sugar into a small

screw top jar and shake well.

4. Place asparagus and snow peas into a

serving dish. Pour dressing over and toss

to combine.

5. Put sesame seeds into a dry frying pan

ands cook over a medium heat for 1-2

minutes until lightly golden.

6. Sprinkle over salad and serve.

WATERMELON

GRAPE FIZZ

Serves 1

INGREDIENTS

1 cup watermelon puree

¼ cup grape juice

¾ cup sparkling water (or champagne)

1 serve of crushed ice

METHOD

1. Mix together the watermelon puree and

grape juice in an oversized tumbler.

2. Add the sparkling water, then the ice,

which causes a nice fizz.

3. Serve immediately.
