Mangoes are considered the king of fruits

because they’re so popular in many parts

of the world, including India, Asia and

Central and South America. Mangoes are

true superfruits, based on their all-star

nutritional profile and research studies that

reveal their health-promoting properties.

Chilli Lime Mango

Marinated Chicken

Ingredients

2lbs skinless chicken breast

1 mango; peeled and cubed

2 tbsp chilli sauce

1 tbsp lime juice

1/4 cup honey

1/4 tsp sea salt

1/4 tsp black pepper

1/2 tsp minced garlic

1/4 cup red onion or shallot; chopped

1/4 cup white wine (pinot grigio)

1/4 cup olive oil

1/4 cup orange or pineapple juice

Method

1. Blend everything together in blender, it

should be a nice orange or tropical colour.

2. Wash the chicken and remove any

excess fat/skin. Place in a dish or ziplock

bag. Pour marinade over chicken and let it

marinate in fridge for at least 2 hours, up

to 24 hours.

3. Preheat oven to 220c.

4. Place chicken in a baking dish, pour

excess marinade over the top.

5. Bake for 20-30 minutes

6. Serve sliced with rice or salad.

7. Squeeze some lime juice over the top

and garnish with chilli flakes, chopped

coriander, salt and pepper.
